Chicken Divan

1 whole chicken (I use Costco's already cooked whole chicken)
    (take off bone and cut up into chunks)
2 cans cream of chicken soup or (1 can cream of chicken and 1 can cream of celery)
2 12oz bags of frozen broccoli florets
3/4c mayonnaise (I have used 1/4c)
1T lemon juice
1tsp curry powder (or more to taste)
1 sleeve ritz crackers
2T to 3T butter (or less)
1 to 2 cups cheddar cheese (I prefer sharp)

Microwave the broccoli florets for half the time, run under cold water to stop the cooking.

Crush the ritz crackers in its sleeve, pour into small bowl and drizzle the melted butter over it and stir it up.

Mix the soups, mayonnaise, lemon juice and curry powder, stir in the chicken, broccoli and cheddar cheese.

Spray a 9x9 pan with cooking spray and place the mixture into the pan and spread the ritz cracker mixture over the top.

Bake at 350 degrees until bubbling.

Buttered Noodles with Poppyseed

1 16oz bag  Wide Egg Noodles
1 sm onion, chopped
3T. butter
2 green onions, chopped
2T. poppyseed
1T minced fresh parsley
Salt and Pepper to taste

Cook Wide Egg Noodles to desired consistenly.

Saute the onion with the butter until translucent
Add noodles to the pan with the onions
Add the poppyseed, parsley and green onions, mix together
Add salt and pepper to taste, if desired

Cook for another 1 to 2 minutes

I serve this with the Apple Raisin Porkchops

Blueberry Muffins

2 eggs
2c. milk
1/2c. oil or extra lite olive oil for baking
2c fresh blueberries
1c. quick oatmeal
3c. flour
2/3c. sugar
6tsp baking powder
1tsp salt

Beat eggs and add milk, oil and blueberries.  Add remaining ingredients and mix well.  Bake at 375 degrees for 15 to 18 minutes.  Check muffins with a knife after 16 minutes and if knife comes out clean, Done!










Spray cupcake pan with baking spray with flour and fill the cups with the batter until level with the pan.  Makes about 18 muffins.

 

Pork Roast

1-3-4lb boneless pork roast
1-can of coke (not diet)
1-can cream of mushroom soup

Mix together the cream of mushroom soup with the can of coke in the baking dish that you will use, it will make the gravy.  I recommend an 8x8 or 9x9 baking pan.  (If you use a 13x9 pan, I suggest doubling the coke and the soup or it will just burn up in your pan.
Salt and pepper the top of the pork roast.  Put into the pan.  Bake at 375 for 2.5 to 3 hours or until done 185 degrees or until juices run clear
